Pumpkin Spice Energy Bites

Total time: 20 minutes
Yield: 16 bites

Ingredients:

  • 2 cups rolled oats
  • 2 Tbsp chia seeds
  • 1/4 cup pumpkin puree
  • 1 1/2 tsp pumpkin spice
  • 3 Tbsp mini, semi-sweet chocolate chips
  • 1/4 cup honey
  • Pinch of salt
Directions:
  1.  Combine all ingredients into a mixing bowl until they come together in a sticky ball.
  2.  Using a cookie scoop, scoop out 16 balls onto a cookie sheet or muffin tin.
  3.  Place in freezer for 15 minutes before storing in the refrigerator for up to one week.
