Broccoli Puff Casserole

Total time: 1 hour
Yield: 16 Servings

Ingredients:

  • 3 heads of broccoli
  • ¼ cup milk
  • 5 large carrots
  • 1 egg, beaten
  • ½ onion, chopped
  • 1 cup grated cheddar cheese
  • 2 Tbsp butter
  • ¼ cup bread or cracker crumbs
  • ¼ cup mayonnaise
  • 1 can cream of mushroom soup

Directions:

  1. Cut broccoli into flowerets and cook until tender. Slice carrots and cook until tender.
  2. In a bowl, microwave onion and butter for 2 minutes. Mix onion, mayonnaise, soup, milk, egg and cheese. Add cooked vegetables and mix gently.
  3. Pour into a lightly oiled casserole dish. Top with crumbs.
  4. Bake at 350 for 35-40 minutes.
