Gram's Homemade Rolls

This is my grandmother's roll recipe. I haven't had the opportunity to enjoy them as much since her passing so I took the opportunity to remember her by making them myself. She was great at cooking but her bread and fudge were definitely the best. The bread is so light and slightly sweet. I hope your family enjoy this recipe as much as mine!

Preparation time: 30 minutes   
Rise time: 2 hours 30 minutes
Bake time: 7-10 minutes        
Total time: 3 hours 10 minutes                 
Yield: about 20-25 rolls

Ingredients:

  • 1 Tbsp yeast, softened in ¼ cup water                             
  • ½ cup butter
  • ¾ cup milk                                                                            
  • ½ cup sugar
  • 1 tsp salt                                                                
  • 3 eggs
  • 3 ½ to 4 cups flour
Directions:
  1. Soften yeast, sprinkled with a little of the sugar, in large bowl that can be covered.
  2. Melt butter in microwave. Add milk and heat for 1 minute.
  3. Break eggs into a 4 cup measuring container, mix and gradually add milk mixture. (Do not cook eggs). This should cool off the milk mixture enough to add to yeast, but test it (warm to touch to make sure).
  4. Add sugar and salt.
  5. Last, add flour and mix with a fork. It makes a slightly sticky mixture. (The secret to light rolls is to not add too much flour either in the original mix or when rolling.)
  6. Cover and let rise and until double in size.
  7. Flour the surface where you will roll out dough. Marble or Corian counters are ideal. I use a pizza cutter to cut in triangles and roll up large to small. (The triangles do not need to be exact).
  8. Spray pan with nonstick spray and spray the rolls when complete.
  9. Let rise about 2 ½ hours. (Gram would frequently make the rolls the day before, roll them out and place on pans, cover it tightly with plastic wrap and refrigerate until the next day. Release the plastic, and let rise.)
  10. Bake at 350°F for about 7-10 minutes or until golden brown.
  11. Optional orange frosting: ¼ cup butter, 2-4 Tbsp orange juice, 2 Tbsp orange zest, and powdered sugar to reach good consistency.

Orange Frosting

Preparation time: 5 minutes
Total time: 5 minutes
Yield: Enough for 25 rolls

Ingredients: 

  • ¼ cup butter 
  • 2-4 Tbsp. orange juice
  • 2 Tbsp. orange zest
  • Powdered sugar 

Directions:

  1. Soften butter to room temperature.
  2. Combine butter, orange juice, and orange zest and stir until incorporated.
  3. Add in powdered sugar until frosting reaches good consistency.
