Orange Ginger Salmon




Preparation time: 5 minutes
Marinate time: 30 minutes
Cook time: 20 minutes
Total time: 55 minutes
Yield: 4 Servings

Ingredients:
  • 4 salmon filets, about 1 ½ lbs.
Marinade: 
  • 1 cup orange juice
  • 1 Tbsp honey
  • ¼ cup soy sauce
  • 2 Tbsp ginger, grated
  • 1 clove garlic, minced
  • 2 Tbsp cilantro, minced
  • 2 Tbsp Canola oil
  • Salt and pepper

Directions:
  1. Mix marinade ingredients in a plastic bag.  Add the salmon and chill for 30 minutes.
  2. Preheat the oven to 375 degrees.  Place the salmon and the marinade in a greased baking dish and bake for 20 minutes or until just flaking, do not overbake.
  3. Serve over rice with your favorite vegetables.
