Twice Baked Potatoes


Preparation time: 15 minutes
Bake time: 1 hour
Total time: 1 hour 15 minutes
Yield: 8 Servings

Ingredients:

  • 4 large Russet potatoes
  • ¼ cup of butter
  • ½ Tbsp. salt
  • Milk to taste
  • 2 cups shredded cheddar cheese

Directions:

  1. Preheat oven to 425°F
  2. Wash and dry potatoes. Pierce the potato 2-3 times with a fork.
  3. Place potatoes on a baking sheet and bake for about 45 minutes. Potato should be tender inside if you poke a fork into it.
  4. Remove from oven and slice potatoes in half lengthwise. Spoon out potato flesh and place in mixing bowl. Set aside potato skins.
  5. In a bowl, combine potato with butter, salt, and milk until it has reached desired consistency.
  6. Spoon mashed mixture back into reserved skins. Top each half potato with ¼ cup shredded cheddar cheese.
  7. Place back in the oven and bake until cheese is melted, about 15 minutes.
  8. Enjoy!
