Ingredients:
- 4 large Russet potatoes
- ¼ cup of butter
- ½ Tbsp. salt
- Milk to taste
- 2 cups shredded cheddar cheese
Directions:
- Preheat oven to 425°F
- Wash and dry potatoes. Pierce the potato 2-3 times with a fork.
- Place potatoes on a baking sheet and bake for about 45 minutes. Potato should be tender inside if you poke a fork into it.
- Remove from oven and slice potatoes in half lengthwise. Spoon out potato flesh and place in mixing bowl. Set aside potato skins.
- In a bowl, combine potato with butter, salt, and milk until it has reached desired consistency.
- Spoon mashed mixture back into reserved skins. Top each half potato with ¼ cup shredded cheddar cheese.
- Place back in the oven and bake until cheese is melted, about 15 minutes.
