Chocolate Mousse Cake


Preparation time: 20 minutes
Total time: Overnight + 20 minutes
Yield: 12 Servings

Ingredients:
  • 1 package Oreo cookies
  • 1 cube of butter
  • 6 eggs
  • 2 cups heavy whipping cream
  • 6 Tbsp. powdered sugar
  • 2 2/3 cup semi-sweet chocolate chips (one pack)
Directions:
  1. Crush Oreo's and mix with melted butter.  Press on bottom of spring-form pan.  Put in refrigerator.  
  2. Melt chocolate chips in microwave for 60 seconds, stir, melt another 30 seconds, stir, etc. until they are melted.  Set aside. 
  3. In another bowl beat 2 whole eggs.  Set aside.  
  4. Separate 4 egg whites and 4 egg yolks.  Beat egg yolks.  Beat egg whites until frothy (makes peaks).  
  5. Whip heavy cream with powdered sugar.  
  6. Now beat melted chocolate with 2 beaten eggs.  Add 4 egg yolks and mix.  
  7. Alternate folding in a spoonful of cream with a spoonful of egg whites until mixes.  
  8. Pour in crust and let sit in fridge overnight.  
  9. Serve with more whip cream, berries or cool whip.
