Ingredients:
- 4 cups uncooked egg noodles
- 1 lb. ground beef
- 1 onion, diced
- 8 oz. mushrooms, sliced
- 1-10 oz. can cream of mushroom soup
- 1/2 cup plain yogurt or sour cream
- 4 cups spinach (optional)
- Follow directions on package for cooking noodles.
- Place beef and diced onion in a skilled and cook until beef is no longer pink and onion starts to soften.
- Add mushrooms. Cook for about 2 minutes or until mushrooms start to lilt.
- Add cream of mushroom soup and coat beef mixture. Add yogurt to thin the soup.
- When beef mixture is bubbling, add spinach and stir in until wilted.
- Serve over egg noodles.
