Ingredients:
- 4 skinless, boneless chicken breasts
- ½ cup brown sugar
- ½ cup water
- 2 cups salsa of choice
- 1-8 oz. pkg. cream cheese
- 1 can whole corn, drained
- 1 can black beans, rinsed and drained
- 2 cups shredded cheddar cheese
- For Serving: brown rice, sour cream, cilantro, and avocado
- Place chicken in crock pot with brown sugar and water. Cook on high for 4-6 hours. Use hand mixer to shred chicken.
- Add to the liquid the salsa, cream cheese, corn, black beans, and cheese. Mix well.
- Serve over rice or chips. Top with avocado, sour cream, and cilantro
