Total time: 1 hour 15 minutes
Yield: 1 9x5 loaf, or 4 small loaves
Ingredients:
- 1 cup sugar
- 1/2 cup shortening
- 2 eggs
- 1 tsp lemon juice
- 1 tsp pure vanilla extract
- 3-5 bananas, mashed
- 2 cups flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup chopped nuts
- Preheat oven to 350 degrees.
- In a large mixing bowl cream sugar and shortening until smooth. Add eggs, lemon juice and vanilla. Beat until fluffy. Add bananas.
- Combine flour, soda, powder, and salt. Add to banana mixture. Stir in nuts.
- Pour into greased 9 x 5-inch loaf pan.
- Bake 45-50 minutes. Cool 10 minutes in pan before removing.
