Banana Nut Bread


Preparation time: 15 minutes
Total time: 1 hour 15 minutes
Yield: 1 9x5 loaf, or 4 small loaves

Ingredients:
  • 1 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 1 tsp lemon juice
  • 1 tsp pure vanilla extract
  • 3-5 bananas, mashed
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chopped nuts
Directions:
  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl cream sugar and shortening until smooth. Add eggs, lemon juice and vanilla. Beat until fluffy. Add bananas. 
  3. Combine flour, soda, powder, and salt. Add to banana mixture. Stir in nuts. 
  4. Pour into greased 9 x 5-inch loaf pan. 
  5. Bake 45-50 minutes. Cool 10 minutes in pan before removing.
