Ingredients:
- 6 c. graham cracker crumbs (about 4 packages full-sheet graham crackers)
- 1 1/2 c. melted butter
- 1 c. granulated sugar
- 2 boxes Devil's food cake mix, plus ingredients called for on box
- 1 container chocolate frosting
- 1 tsp. vanilla
- pinch of salt
- 60 marshmallows
Directions:
- Preheat oven to 350° and line five 12-cup muffin tins with cupcake liners.
- Make cupcakes: Combine graham cracker crumbs, melted butter, and sugar in small bowl. Press about 1 tablespoon of mixture into each cupcake liner to make mini crusts.
- Prepare cake mix according to box instructions and divide batter between liners and bake for a couple minutes less than the box instructs, about 16 minutes.
- While the cupcakes are baking, make a quick ganache: combine frosting, vanilla, and salt in a bowl, heat in the microwave for about 15 seconds. Stir to mix well.
- When cupcakes are almost done baking, top each with a marshmallow. Return trays to oven and bake until marshmallows are golden and very soft, 4 to 5 minutes more.
- Let cupcakes cool. Drizzle a little of the ganache on the marshmallow top and sprinkle with leftover crust crumbs.
