Navajo Tacos


Preparation time: 20 minutes
Total time: 30 minutes
Yield: 6 tacos

Ingredients:

  • 12 Frozen rolls
  • Oil for frying
  • 1 lb ground beef
  • 1 packet Taco seasoning
  • 1 can refried beans

Toppings:

  • Shredded lettuce
  • Tomato, diced
  • Shredded cheese
  • Green onion
  • Cilantro
  • Jalapeno
  • Olives
  • Lime
  • Sour cream
  • Guacamole or avocado
  • Salsa

Directions:
  1. Thaw rolls. 
  2. When thawed, heat oil over medium high heat in a medium pan. Combine two rolls into one and roll out into a large disk, about 1/4 inch thick. Fry bread one at a time until cooked through and golden brown. Place on a prepared plate with paper towels to drain. 
  3. Heat another pan over medium heat and cook the ground beef until brown and crumbly. Drain. Add taco seasoning and refried beans to the meat. Stir until well incorporated. 
  4. Serve by taking the fried bread and topping with the meat mixture, lettuce, tomato, cheese and any other desired toppings.
