Ingredients:
- 1 cup walnuts
- 2 cups old-fashioned rolled oats
- 1 tsp. baking powder
- 1 tsp cinnamon plus extra for garnish
- 1/4 tsp salt
- 1 1/4 cups whole milk
- 1/2 cup yogurt
- 1 large egg
- 1/3 cup maple syrup
- 2 Tbsp. unsalted butter, melted
- 1 tsp. vanilla
- 1 1/2 cups blueberries, fresh or frozen
- 1 1/2 cups finely chopped apple
Directions:
- Preheat oven to 325°F.
- Grease an 8 x 8" baking dish. Place 1/2 cup blueberries and 1/2 cup chopped apple in the bottom of the dish.
- Finely chop the walnuts. Set aside a 1/2 cup for garnish and take the other half cup and combine with the oats, baking powder, cinnamon and salt in a mixing bowl. Stir and pour over the fruit.
- Next, whisk the milk, yogurt, egg, maple syrup, butter, and vanilla together in a bowl. Pour over the oat mixture in the baking dish. Press the oats down into the milk mixture to submerge.
- Top with remaining blueberries, apples, and walnuts. Sprinkle with cinnamon.
- Bake for 40-45 minutes, until the top is brown and oats are set. Serve warm with yogurt.

Great recipe. We made it to have for breakfast and it lasted 5 days. It was still great on the last day too. Perfect breakfast when you add served with vanilla yogurt.
