Blueberry, Apple and Walnut Baked Oatmeal

Yield: 9 Servings

Ingredients:

  • 1 cup walnuts
  • 2 cups old-fashioned rolled oats
  • 1 tsp. baking powder
  • 1 tsp cinnamon plus extra for garnish
  • 1/4 tsp salt
  • 1 1/4 cups whole milk
  • 1/2 cup yogurt
  • 1 large egg
  • 1/3 cup maple syrup
  • 2 Tbsp. unsalted butter, melted
  • 1 tsp. vanilla
  • 1 1/2 cups blueberries, fresh or frozen
  • 1 1/2 cups finely chopped apple

Directions:

  1. Preheat oven to 325°F.
  2. Grease an 8 x 8" baking dish. Place 1/2 cup blueberries and 1/2 cup chopped apple in the bottom of the dish.
  3. Finely chop the walnuts. Set aside a 1/2 cup for garnish and take the other half cup and combine with the oats, baking powder, cinnamon and salt in a mixing bowl. Stir and pour over the fruit.
  4. Next, whisk the milk, yogurt, egg, maple syrup, butter, and vanilla together in a bowl. Pour over the oat mixture in the baking dish. Press the oats down into the milk mixture to submerge. 
  5. Top with remaining blueberries, apples, and walnuts. Sprinkle with cinnamon.
  6. Bake for 40-45 minutes, until the top is brown and oats are set. Serve warm with yogurt.

  1. Great recipe. We made it to have for breakfast and it lasted 5 days. It was still great on the last day too. Perfect breakfast when you add served with vanilla yogurt.
