Apple Streusel French Toast

Ingredients
Streusel Topping:

  •  1/4 cup butter, softened
  •  1/4 cup light brown sugar
  •  1/4 cup all-purpose flour
  •  1/4 tsp. ground cinnamon
  •  1/2 cup chopped walnuts

French Toast:

  •  1 egg
  •  1/4 cup whole milk
  •  1 Tbsp. all-purpose flour
  •  1 1/2 tsp. ground cinnamon
  •  1/8 tsp. nutmeg
  •  1/2 tsp. vanilla extract
  •  1 can flaky cinnamon rolls
  •  1/2 can apple pie filling

Directions:

  1. Preheat oven to 350°F degrees. Spray a 9x9 inch baking dish with non-sticking cooking spray. Set aside.
  2. Make streusel topping: In a small bowl, combine butter, brown sugar, flour, cinnamon and chopped walnuts. Mix together until mixture becomes crumbly. Set aside.
  3. Make french toast: In a large bowl, whisk together eggs, whole milk, flour, cinnamon, nutmeg, and vanilla extract.
  4. Open canned cinnamon rolls, slice each cinnamon roll into eighths. Place cinnamon roll pieces into prepared baking dish. Pour egg mixture over top of cinnamon roll pieces. Make sure that each piece is generously coated in egg mixture.
  5. Evenly spread apple pie filling over top of cinnamon roll pieces. Sprinkle streusel topping over apple pie filling.
  6. Bake uncovered for 40-45 minutes or until top becomes lightly brown. Drizzle cinnamon roll icing over top of french toast bake and enjoy!
