Summer Salad

Ingredients:

  • 6 cups loosely packed fresh spinach
  • 1 head Romaine, cut into strips
  • 6-8 large strawberries hulled and quartered
  • 1 avocado peeled, seeded and cut into chunks
  • 1/2 cup fresh blueberries
  • 1/4 cup Parmesan cheese
  • 2 tablespoons sliced almonds
  • Strawberry and or Poppy Seed Vinaigrette 

Directions:

  1. Combine spinach and Romaine in a bowl. Toss with dressing until leaves are lightly coated. 
  2. Arrange the strawberries and blueberries in a bowl. Add the avocado and top with Parmesan and almond slices. 
  3. Serve with more dressing, if desired.
