Taco Stuffed Sweet Potatoes

Yield: 4 Servings

Ingredients:

  • 1/4 lb. ground beef
  • 1/4 onion, chopped
  • 1 clove garlic, minced
  • 1 Tbsp. Taco seasoning
  • 1/2 cup shredded cheese
  • 1/2 can black beans, drained and rinsed
  • 1-2 Tbsp. water
  • 2 medium sweet potatoes about 12-14 ounces each
Toppings:
  • diced tomato
  • sliced avocado
  • sour cream
  • cilantro

Directions:
  1. Wash sweet potatoes and cook in air-fryer at 400°F for 60 minutes, turning every 20 minutes. When done, cut in half and let cool. You can also cook in the oven at 425°F for 45 minutes if you are cooking a few sweet potatoes.
  2. 20 minutes before the sweet potatoes are done, brown ground beef, chopped onion, and garlic in a large skillet over medium high heat. Drain grease and add the taco seasoning, black beans, and cheese. 
  3. Reduce heat to medium low and cook for about 5 more minutes until mixture has thickened and is heated through. Add up to 2 Tbsp. of water to achieve desired consistency.
  4. Spoon the cooked taco meat over the sweet potatoes and add desired toppings such as diced tomato, avocado, cilantro, or sour cream. Enjoy!
