Ingredients:
- 1/4 lb. ground beef
- 1/4 onion, chopped
- 1 clove garlic, minced
- 1 Tbsp. Taco seasoning
- 1/2 cup shredded cheese
- 1/2 can black beans, drained and rinsed
- 1-2 Tbsp. water
- 2 medium sweet potatoes about 12-14 ounces each
- diced tomato
- sliced avocado
- sour cream
- cilantro
Directions:
- Wash sweet potatoes and cook in air-fryer at 400°F for 60 minutes, turning every 20 minutes. When done, cut in half and let cool. You can also cook in the oven at 425°F for 45 minutes if you are cooking a few sweet potatoes.
- 20 minutes before the sweet potatoes are done, brown ground beef, chopped onion, and garlic in a large skillet over medium high heat. Drain grease and add the taco seasoning, black beans, and cheese.
- Reduce heat to medium low and cook for about 5 more minutes until mixture has thickened and is heated through. Add up to 2 Tbsp. of water to achieve desired consistency.
- Spoon the cooked taco meat over the sweet potatoes and add desired toppings such as diced tomato, avocado, cilantro, or sour cream. Enjoy!
