No Crust Quiche


Preparation time: 10 minutes
Total time: 55 minutes
Servings: 8

Ingredients:

  • ½ cup onions, chopped
  • 2 cup sour cream
  • 1 lb mushrooms
  • 2 cup small curd cottage cheese
  • 8 eggs
  • 4 cups Monterrey Jack cheese, shredded
  • 4 cups chopped ham or chicken
  • 4 Tbsp butter
  • 1 cup Parmesan cheese
  • ½ cup flour

Directions:

  1. Sauté onions and mushrooms in butter. 
  2. Mix all ingredients together and put in 2, 10-inch quiche pans. 
  3. Bake at 350°F for 40-45 minutes, or until knife stuck into center comes out clean.
  4. Serve hot.
