Ingredients:
- 2 large carrots (2 cups)
- 2 red potatoes (2 cups)
- 1 zucchini (2 1/3 cups)
- 2 red peppers (2 cups)
- 1 head broccoli (1 1/2 cups)
- 16 oz. smoked Italian turkey sausage
- 4 1/2 Tbsp. olive oil
- 4 1/2 Tbsp. fresh thyme
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp dried parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/8 tsp. red pepper flakes
- 1/3 cup Parmesan, freshly grated
- salt and pepper, to taste
Directions:
- Preheat oven to 400°F. Cover pan with foil or parchment paper.
- Thinly slice all veggies and sausage. Evenly disperse on pan.
- Combine seasonings and olive oil. Thoroughly coat veggies.
- Cook 15 minutes. Stir veggies and cook an additional 10-20 minutes or until crisp/tender.
- Top with Parmesan and serve over rice or quinoa.
