One-Pan Italian Sausage & Veggies

Cook time: 35 minutes
Total time: 45 minutes
Yield: 6-8 servings

Ingredients:

  • 2 large carrots (2 cups)
  • 2 red potatoes (2 cups)
  • 1 zucchini (2 1/3 cups)
  • 2 red peppers (2 cups)
  • 1 head broccoli (1 1/2 cups)
  • 16 oz. smoked Italian turkey sausage
  • 4 1/2 Tbsp. olive oil
  • 4 1/2 Tbsp. fresh thyme
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/2 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/8 tsp. red pepper flakes
  • 1/3 cup Parmesan, freshly grated
  • salt and pepper, to taste

Directions:

  1. Preheat oven to 400°F. Cover pan with foil or parchment paper.
  2. Thinly slice all veggies and sausage. Evenly disperse on pan.
  3. Combine seasonings and olive oil. Thoroughly coat veggies.
  4. Cook 15 minutes. Stir veggies and cook an additional 10-20 minutes or until crisp/tender.
  5. Top with Parmesan and serve over rice or quinoa.
*Note: Leave out the sausage and Parmesan for a vegetarian option!
