Preparation time: 10 minutes
Cook time: 3-4 hours on high, 6-7 hours on low
Total time: 8 hours + marinate overnight
Yield: 4-6 servings
Ingredients:
- about 3 lbs Pork shoulder or roast
- 2 liters Coke
Sauce:
- 2-3 oz. diced green chiles
- 10 oz. can of red enchilada sauce
- 1 cup brown sugar
- 1/2 cup coke
- Garlic salt, to taste (optional)
- 1 yellow onion, chopped (optional)
Directions:
- Marinade pork in Coke and some brown sugar overnight.
- Cook meat in slow cooker for 6-7 hours on low or 3-4 hours on high.
- Drain coke out and shred pork - put back in the slow cooker.
- Mix all sauce ingredients and add sauce to slow cooker. Cook on low for another 30 minutes.
- Serve over rice or in a tortilla with beans, chunky salsa, sour cream, guacamole and cheese.
