Cafe Rio Sweet Pork

Preparation time: 10 minutes
Cook time: 3-4 hours on high, 6-7 hours on low
Total time: 8 hours + marinate overnight
Yield: 4-6 servings

Ingredients:
  • about 3 lbs Pork shoulder or roast
  • 2 liters Coke
Sauce:
  • 2-3 oz. diced green chiles
  • 10 oz. can of red enchilada sauce
  • 1 cup brown sugar
  • 1/2 cup coke
  • Garlic salt, to taste (optional)
  • 1 yellow onion, chopped (optional)
Directions:
  1. Marinade pork in Coke and some brown sugar overnight.
  2. Cook meat in slow cooker for 6-7 hours on low or 3-4 hours on high.
  3. Drain coke out and shred pork - put back in the slow cooker. 
  4. Mix all sauce ingredients and add sauce to slow cooker. Cook on low for another 30 minutes.
  5. Serve over rice or in a tortilla with beans, chunky salsa, sour cream, guacamole and cheese.
