Ingredients:
- 1 cup basmati or jasmine rice
- 1 cup water
- 1/2 Tbsp. olive oil
- 1 lime (just juice)
- 1/2 bunch of cilantro, blended
Directions:
- Spray pressure cooker with spray on oil.
- Rinse rice and add to cooker. Add water, oil, lime juice, and blended cilantro. Stir.
- Seal lid and make sure steam release is in the seal position.
- If using basmati rice, cook for 12-14 minutes. If using jasmine rice, cook for 5-6 minutes. Both on the rice setting or low pressure.
- Quickly release pressure. Cilantro can rise to the top, so stir again to incorporate if this is the case.
Notes:
If making a lot of rice, it can take another 5-10 minutes to build up pressure to cook the rice. I made 8 cups of this rice in my pressure cooker and it took 45 minutes, start to finish.
