Caprese Salad

Yield: 6 cups

Ingredients:
  • 2 cups red cherry or grape tomatoes
    • halved
  • 2 cups yellow cherry or grape tomatoes
    • halved
  • 2 large avocados
    • pitted, peeled and diced
  • 8 oz. mini mozzarella balls
  • 1/2 cup fresh basil
    • chiffonade
Dressing:
  • 3 Tbsp. honey
  • 3 Tbsp. white balsamic vinegar
  • 3 Tbsp. extra virgin olive oil
  • 1/4 tsp. salt 
  • 1/4 tsp. black pepper
Directions:
  1. Prepare salad and place ingredients in a bowl.
  2. Whisk dressing ingredients until cohesive. Drizzle over salad.
  3. Serve.
