Chicken Lo Mein

Ingredients:
  • 4 oz. Lo Mein egg noodles
For Chicken:
  • 2 chicken breasts, thawed and cut in to 1/2 Inch strips
  • Salt, to taste
  • 1/2 Tbsp. soy sauce
  • 1/2 tsp. cornstarch
  • 1 tsp. vegetable oil
For main dish:
  • 1 Tbsp. sesame oil
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. minced ginger
  • 1 Tbsp. minced garlic
  • 1/4 cup red onion, sliced
  • 1/4 cup carrot, sliced
  • 1/4 cup red bell pepper
  • 1/4 cup green bell pepper
  • 1/2 cup scallion, cut into 2 inch pieces
  • 1/2 cup cabbage, shredded
  • 1/4 cup water or chicken stock, for consistency
  • Salt, to taste
For Sauce Mix:
  • 3 Tbsp. soy sauce
  • 1 Tbsp. oyster sauce or Hoisin sauce
  • 1 tsp. sriracha
  • 1 tsp. sugar
  • Salt, to taste
  • 1 tsp. sesame oil
Directions:
  1. Prepare noodles according to package instructions, set aside. 
  2. While noodles are cooking, prepare chicken and marinate for 5 minutes.
  3. While chicken is marinating, prepare sauce and set aside. 
  4. In a pan add sesame oil and heat over medium high heat. With pair of tongs, add each piece of chicken to the pan. Discard any leftover marinade. Toss until cooked. Set aside. 
  5. In the same pan add the vegetable oil, ginger and garlic. Fry until fragrant. Careful not to burn the ginger and garlic or the final dish will taste bitter.
  6. Add the red onion, carrots and bell peppers to the pan. Cook until starting to become tender, do not over cook. Then add the scallions and cabbage. 
  7. Once incorporated, add chicken, noodles, and sauce to the pan. If it is dry, add water or chicken stock to reach desired consistency. Toss until noodles are coated and it is well mixed. Season with salt to taste. 
  8. Serve immediately.
