Mediterranean Salad

Ingredients:
  • 2 cups Spinach
  • 1 pint Cherry tomatoes
  • 1 English cucumber
  • 1 15 oz. can chickpeas, drained and rinsed
  • 2 Tbsp. Oregano, Fresh
  • 1/2 Avocado, chopped
  • 1/2 Red onion, chopped
  • 1 bell pepper, chopped
  • 1/2 cup Feta or Parmesan cheese
Dressing:
  • 1/4 cup Olive oil, Extra Virgin
  • 2 Tbsp. White wine vinegar
  • 1 Tbsp. Honey
  • 2 Tbsp. Lemon juice
  • 1 Garlic clove, minced
  • 2 Tbsp. Thyme
  • 1 tsp. Oregano, Dried
  • Salt and Pepper, to taste
Directions:
  1. Whisk dressing ingredients together until well combined. Set Aside.
  2. Prepare vegetables and combine remaining ingredients in a large mixing bowl.
  3. Pour dressing over salad just before serving, toss and serve.
