Ingredients:
- 2 cups Spinach
- 1 pint Cherry tomatoes
- 1 English cucumber
- 1 15 oz. can chickpeas, drained and rinsed
- 2 Tbsp. Oregano, Fresh
- 1/2 Avocado, chopped
- 1/2 Red onion, chopped
- 1 bell pepper, chopped
- 1/2 cup Feta or Parmesan cheese
Dressing:
- 1/4 cup Olive oil, Extra Virgin
- 2 Tbsp. White wine vinegar
- 1 Tbsp. Honey
- 2 Tbsp. Lemon juice
- 1 Garlic clove, minced
- 2 Tbsp. Thyme
- 1 tsp. Oregano, Dried
- Salt and Pepper, to taste
Directions:
- Whisk dressing ingredients together until well combined. Set Aside.
- Prepare vegetables and combine remaining ingredients in a large mixing bowl.
- Pour dressing over salad just before serving, toss and serve.
