Ingredients:
- 2 lbs. boneless, skinless chicken breasts
- 1 tsp. salt and pepper, or to taste
- 1 1/2 Tbsp. vegetable oil
- 2 Tbsp. curry powder
- 1/2 onion, thinly sliced
- 1/2 green bell pepper, thinly sliced
- 2 cloves garlic, crushed
- 1 (14 oz.) can coconut milk
- 1 (14.5 oz.) can stewed, diced tomatoes
- 1 (8 oz.) can tomato sauce
- 3 Tbsp. sugar
- 1/4 cup whole milk or sour cream (optional)
- Rice, for serving
Directions:
- Spray slow cooker and place fresh or frozen chicken in the bottom.
- Slice onion and bell pepper and place on top of the chicken.
- Add all remaining ingredients in a mixing bowl, stir until well combined and pour over chicken and vegetables.
- Cover and cook on low for 6 hours.
- 30 minutes before serving, cut chicken into cubes and add milk or sour cream, if desired. Let heat for 30 minutes.
- Serve immediately over rice.
