Slow Cooker: Coconut Curry Chicken

Total time: 6-8 hours and 20 minutes
Yield: 6 Servings

Ingredients:
  • 2 lbs. boneless, skinless chicken breasts
  • 1 tsp. salt and pepper, or to taste
  • 1 1/2 Tbsp. vegetable oil
  • 2 Tbsp. curry powder
  • 1/2 onion, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 2 cloves garlic, crushed
  • 1 (14 oz.) can coconut milk
  • 1 (14.5 oz.) can stewed, diced tomatoes
  • 1 (8 oz.) can tomato sauce
  • 3 Tbsp. sugar
  • 1/4 cup whole milk or sour cream (optional)
  • Rice, for serving
Directions:
  1. Spray slow cooker and place fresh or frozen chicken in the bottom. 
  2. Slice onion and bell pepper and place on top of the chicken.
  3. Add all remaining ingredients in a mixing bowl, stir until well combined and pour over chicken and vegetables.
  4. Cover and cook on low for 6 hours. 
  5. 30 minutes before serving, cut chicken into cubes and add milk or sour cream, if desired. Let heat for 30 minutes.
  6. Serve immediately over rice.
