Slow Cooker Vegetable Barley Soup

Total Time: 6 hours and 5 minutes
Yield: 4-6 Servings

Ingredients:
  • 1/2 yellow onion, diced
  • 1 tsp. garlic powder
  • 1 Tbsp. olive oil 
  • 1 cup carrots, sliced
  • 1-14 oz. can diced tomatoes 
  • 1/2 tsp. Italian seasoning
  • Black pepper, to taste
  • 3 cups vegetable broth 
  • 1 small russet potato, washed and cubed
  • 1/2 cup frozen green beans
  • 1/4 cup frozen corn 
  • 1/4 cup frozen peas 
  • 1/2 Tbsp. lemon juice
  • 1/2 cup quick pearled barley 
  • Bread, for serving
Directions:
  1. Spray slow cooker.  Add all the prepared ingredients besides the barley.  
  2. Cook on low for 5 hours. Add the barley and turn to high for one hour.  
  3. Serve warm with Bread.
