Ingredients:
- 1/2 yellow onion, diced
- 1 tsp. garlic powder
- 1 Tbsp. olive oil
- 1 cup carrots, sliced
- 1-14 oz. can diced tomatoes
- 1/2 tsp. Italian seasoning
- Black pepper, to taste
- 3 cups vegetable broth
- 1 small russet potato, washed and cubed
- 1/2 cup frozen green beans
- 1/4 cup frozen corn
- 1/4 cup frozen peas
- 1/2 Tbsp. lemon juice
- 1/2 cup quick pearled barley
- Bread, for serving
Directions:
- Spray slow cooker. Add all the prepared ingredients besides the barley.
- Cook on low for 5 hours. Add the barley and turn to high for one hour.
- Serve warm with Bread.
