Baked Oatmeal Cups


Preparation time: 10 minutes
Bake time: 30-40 minutes
Total time: 1 hour
Yield: 24 oatmeal cups

Ingredients:
  • 3 cups rolled oats
  • 1 tsp. baking powder
  • 1 Tbsp. cinnamon
  • 1/2 tsp. salt
  • 2 mashed bananas
  • 4 eggs, beaten
  • 1 cup milk
  • 1/4 cup maple syrup or honey, optional
  • 1 tsp. vanilla
  • 2 cups diced apples*

Directions:
  1. Combine the oats, baking powder, cinnamon and salt into a medium mixing bowl.  Stir so they are evenly incorporated.  
  2. In a separate bowl, mix together the bananas, eggs, milk, syrup and vanilla.  Whisk until evenly incorporated.  
  3. Add the egg mixture to the oat mixture and mix until combined.  Stir in the apples.  Fill muffin tins 3/4 to all the way full.  
  4. Bake at 350°F for 30-40 minutes.  
  5. Let cool for 10 minutes then serve.  
  6. Keep refrigerated and serve cold or reheated.

*Note: if you don't like raw apples, you can sauté them in cinnamon and coconut oil for a softer taste)
