Yield: 24 oatmeal cups
- 3 cups rolled oats
- 1 tsp. baking powder
- 1 Tbsp. cinnamon
- 1/2 tsp. salt
- 2 mashed bananas
- 4 eggs, beaten
- 1 cup milk
- 1/4 cup maple syrup or honey, optional
- 1 tsp. vanilla
- 2 cups diced apples*
Directions:
- Combine the oats, baking powder, cinnamon and salt into a medium mixing bowl. Stir so they are evenly incorporated.
- In a separate bowl, mix together the bananas, eggs, milk, syrup and vanilla. Whisk until evenly incorporated.
- Add the egg mixture to the oat mixture and mix until combined. Stir in the apples. Fill muffin tins 3/4 to all the way full.
- Bake at 350°F for 30-40 minutes.
- Let cool for 10 minutes then serve.
- Keep refrigerated and serve cold or reheated.
*Note: if you don't like raw apples, you can sauté them in cinnamon and coconut oil for a softer taste)
