Cookie Baked Oatmeal


Preparation time: 5 minutes
Bake time: 15-20 minutes
Total time: 30 minutes
Yield: 1 Serving

Ingredients:
  • 1/2 cup oats
  • 1/2 banana (the more ripe, the better)
  • 1 egg
  • 1/4 cup milk of choice
  • pinch of salt
  • 1/4 tsp. baking soda
  • chocolate chips

Directions:
  1. Add all ingredients (except chocolate chips) to a blender and blend until fully combined.
  2. Pour batter into a greased, oven safe baking dish.  Top with chocolate chips.
  3. Bake at 350°F for 15-20 minutes, or until a fork comes out clean.
  4. Let cool for 5-10 minutes then enjoy!
