Greek Pita Bowl

Yield: 4 Servings

Ingredients:
  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
For the Rice:
  • 1 cup rice
  • 2 cups water
  • 1/2 Tbsp. turmeric
  • 1 bay leaf
  • 1/4 tsp. black pepper
For the Veggies:
  • 2 Roma tomatoes
  • 1/2 red onion
  • 1 cucumber
For Tzatziki sauce:
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated cucumber
  • 2 Tbsp. lemon juice
  • 1/2 tsp. dry dill
  • 1/2 tsp. garlic powder
  • salt to taste
For garnish:
  • pita bread
Directions:
  1. Combine all the rice ingredients in rice cooker and cook until the water is absorbed and rice is desired texture.
  2. Grill or bake chicken and cut into bite sized pieces.  Season with salt and pepper.
  3. Mince vegetables and stir together in a bowl.
  4. Stir together sauce ingredients until evenly incorporated.
  5. To assemble the bowl:  Add rice to a bowl and top with chicken and vegetables.  
  6. Serve with Tzatziki sauce and warm pita bread.
