Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
For the Rice:
- 1 cup rice
- 2 cups water
- 1/2 Tbsp. turmeric
- 1 bay leaf
- 1/4 tsp. black pepper
For the Veggies:
- 2 Roma tomatoes
- 1/2 red onion
- 1 cucumber
For Tzatziki sauce:
- 1/2 cup plain Greek yogurt
- 1/4 cup grated cucumber
- 2 Tbsp. lemon juice
- 1/2 tsp. dry dill
- 1/2 tsp. garlic powder
- salt to taste
For garnish:
- pita bread
Directions:
- Combine all the rice ingredients in rice cooker and cook until the water is absorbed and rice is desired texture.
- Grill or bake chicken and cut into bite sized pieces. Season with salt and pepper.
- Mince vegetables and stir together in a bowl.
- Stir together sauce ingredients until evenly incorporated.
- To assemble the bowl: Add rice to a bowl and top with chicken and vegetables.
- Serve with Tzatziki sauce and warm pita bread.
