Healthy Pumpkin Muffins


Preparation time: 10 minutes
Bake time: 18-20 minutes
Total time: 30 minutes
Yield: 12 muffins

Ingredients:
  • 3/4 cup flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 Tbsp. sugar
  • 1 1/2 tsp. pumpkin spice*
  • 2 eggs
  • 2/3 cup pumpkin puree
  • 1/2 cup butter, softened
  • 2 tsp. vanilla
  • 1/4 cup maple syrup

Directions:
  1. Combine flour, baking powder, baking soda, sugar and pumpkin spice in a bowl.  Stir to evenly incorporate.
  2. In a large bowl, combine eggs, pumpkin puree, butter, vanilla and maple syrup.  Beat with a mixer until mostly smooth.
  3. Stir the flour mixture into the pumpkin mixture until just mixed.
  4. Spoon batter into muffin tin to 3/4 full.  
  5. Optional: stir 1/4 cup of oats and 1/2 tsp. of cinnamon together to top the muffins with.
  6. Bake at 350°F for 18-20 minutes or until a toothpick comes out clean.
  7. Remove from the pan immediately and cool to room temperature before serving.
*If you don't have pumpkin spice, you can use the following:
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1/8 tsp. cloves
