Yield: 12 muffins
Ingredients:
- 3/4 cup flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 2 Tbsp. sugar
- 1 1/2 tsp. pumpkin spice*
- 2 eggs
- 2/3 cup pumpkin puree
- 1/2 cup butter, softened
- 2 tsp. vanilla
- 1/4 cup maple syrup
Directions:
- Combine flour, baking powder, baking soda, sugar and pumpkin spice in a bowl. Stir to evenly incorporate.
- In a large bowl, combine eggs, pumpkin puree, butter, vanilla and maple syrup. Beat with a mixer until mostly smooth.
- Stir the flour mixture into the pumpkin mixture until just mixed.
- Spoon batter into muffin tin to 3/4 full.
- Optional: stir 1/4 cup of oats and 1/2 tsp. of cinnamon together to top the muffins with.
- Bake at 350°F for 18-20 minutes or until a toothpick comes out clean.
- Remove from the pan immediately and cool to room temperature before serving.
*If you don't have pumpkin spice, you can use the following:
- 1 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1/8 tsp. cloves
