Salmon Patties

Cook time: 10 minutes
Total time: 20 minutes
Yield: 6 small patties 

Ingredients:
  • 2 filets of salmon, cooked
  • Salt and Pepper to taste
  • 1 egg
  • 5-7 Saltine crackers, crushed
  • a squirt of lemon juice
  • Butter or oil for frying

Directions:
  1. Shred the salmon and remove the skin.
  2. In a  medium bowl, mix the salmon with the remaining ingredients.  If the mixture seems too wet add another cracker or two.
  3. Divide the mixture into 4-6 equal parts and form patties.
  4. Heat butter/oil in a large skillet to medium heat and cook the patties on both sides until brown, about 4 minutes each side.
  5. Serve with lemon and tartar sauce.
