Ingredients:
- 2 filets of salmon, cooked
- Salt and Pepper to taste
- 1 egg
- 5-7 Saltine crackers, crushed
- a squirt of lemon juice
- Butter or oil for frying
Directions:
- Shred the salmon and remove the skin.
- In a medium bowl, mix the salmon with the remaining ingredients. If the mixture seems too wet add another cracker or two.
- Divide the mixture into 4-6 equal parts and form patties.
- Heat butter/oil in a large skillet to medium heat and cook the patties on both sides until brown, about 4 minutes each side.
- Serve with lemon and tartar sauce.
