Mexican "Lasagna"

Total time: 1 hour
Yield: 4 Servings

Ingredients:
  • 16 oz. can refried beans
  • 4 oz. can chopped green chilies
  • 1 pkg. taco seasoning or Homemade Taco Seasoning
  • 2 cups Pepper Jack cheese shredded, divided use
  • 4 Tortillas
  • 1 cup chunky salsa, divided
  • 1/2 cup sour cream
  • 1 green onion, chopped
  • 1 small Roma tomato, chopped

Directions:
  1. Preheat oven to 350 degrees F.
  2. In a skillet, add the beans, chilies, taco seasoning, and salsa; mix well.
  3. Heat through over medium heat for about 5 minutes.
  4. In a well-greased 9x9” baking dish, spread a little bean mixture on the bottom to prevent the tortillas from sticking.
  5. Layer one tortilla and spread with one-third of the remaining bean mixture.
  6. Sprinkle with 1/2 cup of cheese.
  7. Repeat layers twice.
  8. Layer one more tortilla and spread sour cream over the top.  Then sprinkle remaining cheese and top with green onion and chopped tomato.
  9. Cover and bake at 350° for 30 minutes then uncover and bake for an additional 10 minutes.
  10. Let stand 10-15 minutes before cutting.
