Ingredients:
- 16 oz. can refried beans
- 4 oz. can chopped green chilies
- 1 pkg. taco seasoning or Homemade Taco Seasoning
- 2 cups Pepper Jack cheese shredded, divided use
- 4 Tortillas
- 1 cup chunky salsa, divided
- 1/2 cup sour cream
- 1 green onion, chopped
- 1 small Roma tomato, chopped
Directions:
- Preheat oven to 350 degrees F.
- In a skillet, add the beans, chilies, taco seasoning, and salsa; mix well.
- Heat through over medium heat for about 5 minutes.
- In a well-greased 9x9” baking dish, spread a little bean mixture on the bottom to prevent the tortillas from sticking.
- Layer one tortilla and spread with one-third of the remaining bean mixture.
- Sprinkle with 1/2 cup of cheese.
- Repeat layers twice.
- Layer one more tortilla and spread sour cream over the top. Then sprinkle remaining cheese and top with green onion and chopped tomato.
- Cover and bake at 350° for 30 minutes then uncover and bake for an additional 10 minutes.
- Let stand 10-15 minutes before cutting.
