Ingredients:
- 2 cups romaine lettuce, chopped
- 2 large carrots, chopped
- 1 cup cucumber chopped
- 3/4 cup bell pepper, chopped
- 1 cup purple cabbage, chopped
- 1/2 avocado, cut into cubes
- 1 green mango, cut into cubes
- 1/4 cup fresh basil, chopped
- 2 Tbsp. fresh mint, chopped
- 1+ cup vermicelli rice noodles
- 1 cup chopped tofu or shrimp
- 1/2 lime, for serving
Homemade Peanut Sauce:
- 1 large spoonful of peanut butter
- splash of warm water
- 1 Tbsp. soy sauce
- 1 Tbsp. rice vinegar
- 1/4 tsp. garlic powder
- dash of maple syrup
OR Lemon Tahini Dressing*:
- 1/4 cup tahini (can substitute natural creamy peanut butter)
- Juice of 1/2 lemon (about 1 1/2 Tbsp.)
- 2-3 Tbsp. water
Directions:
- Combine dressing ingredients, and adjust to taste.
- Mix all salad ingredients together and pour dressing on top.
- Enjoy!
