Spring Roll Salad

Ingredients:
  • 2 cups romaine lettuce, chopped
  • 2 large carrots, chopped
  • 1 cup cucumber chopped
  • 3/4 cup bell pepper, chopped
  • 1 cup purple cabbage, chopped
  • 1/2 avocado, cut into cubes
  • 1 green mango, cut into cubes
  • 1/4 cup fresh basil, chopped
  • 2 Tbsp. fresh mint, chopped
  • 1+ cup vermicelli rice noodles
  • 1 cup chopped tofu or shrimp
  • 1/2 lime, for serving
Homemade Peanut Sauce:
  • 1 large spoonful of peanut butter
  • splash of warm water
  • 1 Tbsp. soy sauce
  • 1 Tbsp. rice vinegar
  • 1/4 tsp. garlic powder
  • dash of maple syrup
OR Lemon Tahini Dressing*:
  • 1/4 cup tahini (can substitute natural creamy peanut butter)
  • Juice of 1/2 lemon (about 1 1/2 Tbsp.)
  • 2-3 Tbsp. water


Directions:
  • Combine dressing ingredients, and adjust to taste. 
  • Mix all salad ingredients together and pour dressing on top.
  • Enjoy!
