Almond Flour Banana Muffins

Total time: 40 minutes
Yield: 12 muffins

Ingredients:
  • 2 Cups Almond Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 3 Large Ripe Bananas (approx. 1 cup)
  • 1 Large Egg
  • 1/4 Cup Maple Syrup
  • 1 tsp Vanilla
  • 1/2 Cup Chocolate Chips (optional)
  • 1/4 Cup Walnuts (optional)

Directions:
  1. Preheat the oven to 350 degrees. Spray a 12-count muffin tin with cooking spray.
  2. In a large mixing bowl, mash the 3 bananas and then add egg, maple syrup, and vanilla. In a separate bowl, mix your dry ingredients, and add to the wet ingredients.
  3. Fold in Chocolate chips and walnuts then distribute in a muffin tin. Bake for 18-20 min or until golden on top and the skewer comes clean.
  4. Let them cool in a pan for 10 min before transferring them to a cooling rack.
  5. Store for 3 days room temp in a sealed container, or in the fridge covered for up to a week.
