Ingredients:
- 2 Cups Almond Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 3 Large Ripe Bananas (approx. 1 cup)
- 1 Large Egg
- 1/4 Cup Maple Syrup
- 1 tsp Vanilla
- 1/2 Cup Chocolate Chips (optional)
- 1/4 Cup Walnuts (optional)
Directions:
- Preheat the oven to 350 degrees. Spray a 12-count muffin tin with cooking spray.
- In a large mixing bowl, mash the 3 bananas and then add egg, maple syrup, and vanilla. In a separate bowl, mix your dry ingredients, and add to the wet ingredients.
- Fold in Chocolate chips and walnuts then distribute in a muffin tin. Bake for 18-20 min or until golden on top and the skewer comes clean.
- Let them cool in a pan for 10 min before transferring them to a cooling rack.
- Store for 3 days room temp in a sealed container, or in the fridge covered for up to a week.
