Ingredients:
- 1 chicken breast
- Salt and pepper, to taste
- 1 cup almonds
- 2 Tbsp. granulated sugar
- 1 bag of spinach
- 1 apple, diced
- 8 strawberries, sliced
- 1 avocado, diced
- 1/2 cucumber, chopped
- 3 green onions, sliced
- Dressing of choice (suggested: poppyseed dressing)
Directions:
- Cut chicken into bite-sized pieces and season with salt and pepper. Preheat a medium pan to medium-high heat. Cook the chicken until cooked, turning it over every couple of minutes to avoid burning. Set aside.
- Candy the almonds by adding the almonds and sugar to a pan on medium-high heat, constantly stirring to avoid burning the sugar. Once the sugar is melted and the almonds are evenly coated in the syrup, transfer to a lined tray or plate for cooling. Set aside.
- In a large bowl, add spinach, apple, strawberries, avocado, cucumber, and green onions. Add the almonds and chicken in when ready to serve.
- Add the dressing, toss, and serve immediately.
