Grilled Chicken Salad

Yield: 4 Servings

Ingredients:
  • 1 chicken breast
  • Salt and pepper, to taste
  • 1 cup almonds
  • 2 Tbsp. granulated sugar
  • 1 bag of spinach
  • 1 apple, diced
  • 8 strawberries, sliced
  • 1 avocado, diced
  • 1/2 cucumber, chopped
  • 3 green onions, sliced
  • Dressing of choice (suggested: poppyseed dressing)

Directions:
  1. Cut chicken into bite-sized pieces and season with salt and pepper.  Preheat a medium pan to medium-high heat.  Cook the chicken until cooked, turning it over every couple of minutes to avoid burning.  Set aside.
  2. Candy the almonds by adding the almonds and sugar to a pan on medium-high heat, constantly stirring to avoid burning the sugar.  Once the sugar is melted and the almonds are evenly coated in the syrup, transfer to a lined tray or plate for cooling.  Set aside.
  3. In a large bowl, add spinach, apple, strawberries, avocado, cucumber, and green onions.  Add the almonds and chicken in when ready to serve.
  4. Add the dressing, toss, and serve immediately.
