Ingredients:
- 2 cups pasta of choice
- 1 chicken breast, diced
- 2 Tbsp. butter
- 2 garlic cloves, minced
- 1/2 tsp. crushed red pepper flakes
- 1/2 Tbsp. oregano
- 1/2 cup sundried tomatoes
- 1 cup spinach
- 1/2 cup heavy cream
- 1/3 cup Parmesan cheese
- 1/2 Tbsp. parsley
Directions:
- Cook the pasta according to the package directions.
- Add the butter to a large skillet over medium heat. Add the diced chicken and the garlic, red pepper flakes, and oregano. Cook for 5-7 minutes, or until the chicken is cooked.
- Add the tomatoes, spinach, and heavy cream. Reduce the heat if necessary, to avoid burning the cream. Stir in the Parmesan and cook until the spinach is wilted.
- When the pasta is ready, add to the chicken and sauce. Use pasta water to thin the sauce, if necessary.
- Stir in the parsley and serve hot.
