Tuscan Chicken Pasta

Ingredients:
  • 2 cups pasta of choice
  • 1 chicken breast, diced
  • 2 Tbsp. butter
  • 2 garlic cloves, minced
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 Tbsp. oregano
  • 1/2 cup sundried tomatoes
  • 1 cup spinach
  • 1/2 cup heavy cream
  • 1/3 cup Parmesan cheese
  • 1/2 Tbsp. parsley

Directions:
  1. Cook the pasta according to the package directions.
  2. Add the butter to a large skillet over medium heat.  Add the diced chicken and the garlic, red pepper flakes, and oregano.  Cook for 5-7 minutes, or until the chicken is cooked.  
  3. Add the tomatoes, spinach, and heavy cream.  Reduce the heat if necessary, to avoid burning the cream.  Stir in the Parmesan and cook until the spinach is wilted.
  4. When the pasta is ready, add to the chicken and sauce.  Use pasta water to thin the sauce, if necessary.  
  5. Stir in the parsley and serve hot.
