Pumpkin Chocolate Chip Cookies


Preparation time: 10 minutes
Bake time: 10 minutes for each batch  
Total time: 40 minutes
Yield: 30 cookies (2 1/2 dozen)

Ingredients:
  • 1 stick of butter (1/2 cup), softened
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 cup pureed pumpkin  
  • 2 tsp. vanilla extract
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground ginger
  • 1/8 tsp. ground cloves  
  • 1 - 1 1/2 cups chocolate chips

Directions:
  1. Preheat oven to 375F
  2. Cream together butter, sugar, and brown sugar using an electric mixer.  Then add the pumpkin, vanilla, and egg and mix until uniform.
  3. In a separate bowl, stir together the flour, baking soda, cinnamon, nutmeg, ginger, and cloves.  Then add the flour mixture to the wet mixture and mix until combined.
  4. Stir in chocolate chips. 
  5. Using a cookie scoop, scoop 12 cookies onto an ungreased jelly roll pan.
  6. Bake for 10 minutes. Let them cool on the pan until able to remove without squishing, about 2 minutes. Let cool to room temperature before storing.
