Ingredients:
- 1 stick of butter (1/2 cup), softened
- 1/2 cup granulated sugar
- 3/4 cup brown sugar, packed
- 1 cup pureed pumpkin
- 2 tsp. vanilla extract
- 1 egg
- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground ginger
- 1/8 tsp. ground cloves
- 1 - 1 1/2 cups chocolate chips
Directions:
- Preheat oven to 375F
- Cream together butter, sugar, and brown sugar using an electric mixer. Then add the pumpkin, vanilla, and egg and mix until uniform.
- In a separate bowl, stir together the flour, baking soda, cinnamon, nutmeg, ginger, and cloves. Then add the flour mixture to the wet mixture and mix until combined.
- Stir in chocolate chips.
- Using a cookie scoop, scoop 12 cookies onto an ungreased jelly roll pan.
- Bake for 10 minutes. Let them cool on the pan until able to remove without squishing, about 2 minutes. Let cool to room temperature before storing.
