Veggie Rich Pasta Sauce (Great for kids!)

Preparation time: 5 minutes
Cook time: 10 minutes
Total time: 15 minutes
Yield: 4-6 Servings

Ingredients:
  • 4 cups of pasta of your choice
  • 1 red onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 5 cloves garlic
  • 1 can cannellini beans
  • 1 Tbsp. tomato paste
  • 1/2 Tbsp. basil
  • 1/3 cup cheese of choice
  • 1/3 cup walnuts
  • 1/3 cup milk
  • 1 Tbsp. oil
  • Salt and pepper to taste

Directions:
  1. Cook pasta according to package directions.
  2. While the pasta is cooking, saute your onions and garlic for about 5 minutes.  Then add in your bell peppers and saute for another 5 minutes.
  3. Put all ingredients into the blender and blend until smooth
  4. Pour over your choice of pasta and enjoy!
