Zucchini Muffins


Preparation time: 20 minutes
Bake time: 14 minutes
Total time: 34 minutes
Yield: 24 muffins

Ingredients:
  • 3 cups Flour
  • 1/2 tsp. Vanilla
  • 2 cups Brown sugar
  • 1/2 tsp. Nutmeg
  • 2 tsp. Baking powder
  • 1/2 cup Butter (softened)
  • 1 tsp. Baking Soda
  • 3 Eggs
  • ½ tsp. Salt
  • 3 cups Shredded zucchini
  • 1 tsp. Cinnamon
  • 3 Tbsp. Milk

Directions:
  1. Preheat oven to 350.
  2. Mix dry ingredients in a large bowl.  Blend in butter.  Add milk, eggs, and vanilla.
  3. Add Zucchini last. Mix enough to moisten the batter.
  4. Cook for 12-14 min with both pans in the oven.
