Banana Oatmeal Muffins (Great for kids!)


Preparation time: 10 minutes
Bake time: 25 minutes
Total time: 35 minutes
Yield:12 muffins

Ingredients:
2 1/2 cups rolled oats
1/2 tsp. cinnamon
1/4 tsp. salt
1 tsp. baking powder
2 Tbsp. chia seeds
1 large banana, mashed
1/2 cup natural peanut butter
1 egg
1/4 cup maple syrup
1 tsp. vanilla
1 cup milk

Directions:
  1. Preheat oven to 350F and spray the muffin tin with non-stick spray.
  2. In a large bowl, mix together oats, cinnamon, salt, baking powder, and chia seeds.
  3. In a medium-sized bowl, mix together mashed banana and peanut butter. Stir in egg until well combined.  Add in maple syrup and vanilla.
  4. Pour wet ingredients into the oat mixture, then add milk.  Stir until everything is combined well. 
  5. Using a cookie scoop, scoop into a muffin tin.
  6. Bake for 25 minutes or until fully set.  
  7. Let the muffins cool completely before storing them.
