- 1/2 cup broth
- 1/4 cup uncooked rice
- 2 oz. Baby Bella mushrooms, sliced
- 1 Clove garlic, minced
- 1/2 medium carrot, sliced
- 1/2 celery stalk, sliced
- 2 small sweet potatoes, peeled and diced
- 1/4 white onion, diced
- 1 bay leaf
- 1 tsp. paprika
- 1/8 tsp. black pepper
- 1/4 tsp. Salt
- pinch of: cinnamon, cloves, nutmeg
- 1/4 cup cream, add a little at a time until it reaches desired consistency
- Kale or spinach
- Additional Salt and pepper, to taste
Directions:
- Grease the bottom of your pressure cooker pot and add all the ingredients except for the cream and kale/spinach. Seal the pressure cooker and set it to the rice setting and set the time appropriate for the type of rice you are using.
- Once the timer is up, release the pressure and carefully remove the lid. Add the cream and kale/spinach and stir until the kale/spinach is wilted.
- Serve hot.
