Wild Rice Skillet

Ingredients:
  • 1/2 cup broth
  • 1/4 cup uncooked rice
  • 2 oz. Baby Bella mushrooms, sliced
  • 1 Clove garlic, minced
  • 1/2 medium carrot, sliced
  • 1/2 celery stalk, sliced
  • 2 small sweet potatoes, peeled and diced
  • 1/4 white onion, diced
  • 1 bay leaf
  • 1 tsp. paprika
  • 1/8 tsp. black pepper
  • 1/4 tsp. Salt
  • pinch of: cinnamon, cloves, nutmeg
  • 1/4 cup cream, add a little at a time until it reaches desired consistency
  • Kale or spinach
  • Additional Salt and pepper, to taste

Directions:
  1. Grease the bottom of your pressure cooker pot and add all the ingredients except for the cream and kale/spinach.  Seal the pressure cooker and set it to the rice setting and set the time appropriate for the type of rice you are using.
  2. Once the timer is up, release the pressure and carefully remove the lid.  Add the cream and kale/spinach and stir until the kale/spinach is wilted.
  3. Serve hot.
