Bacon Zucchini Pasta

Total time: 15 minutes
Yield: 2 Servings

Ingredients:
  • 1/4 lb. pasta of choice
  • 2 slices of bacon
  • 1 zucchini, diced
  • 1/4 onion, sliced
  • 1 tsp. garlic, minced
  • 1 tsp. Italian seasoning
  • Salt and Pepper to taste

Directions:
  1. Cook pasta according to package directions, drain, and set aside.
  2. While pasta is cooking cook the bacon and drain on a plate with a paper towel.  Once the bacon is cooled, chop it up into little pieces.  
  3. In the same pan that you cooked the bacon, wipe out the bacon grease and cook the onions until translucent.  Add the garlic and cook until fragrant, about 1 minute.  Add the Italian seasoning and zucchini and cook to the desired doneness. 
  4. Toss with pasta and season with salt and pepper to taste.
