Hawaiian Macaroni Salad

Yield: 8-10 Servings

Ingredients:
  • 1 lb. macaroni noodles
  • 1/4 cup apple cider vinegar
  • 1 1/2 cups grated carrot
  • 1/3 cup grated yellow onion
  • 2 cups mayo
  • 1/3 cup milk
  • 1/4 cup brown sugar
  • 1 tsp. pepper
  • 1 tsp. salt
  • 1 cup chopped green onions (approximately 7 green onions)

Directions:
  1. Cook macaroni according to the directions on the package. Drain.  Dump the cooked macaroni into a large mixing bowl.  Pour the apple cider vinegar over the macaroni.  Add the grated carrot and onion to the bowl.  Stir well.  Leave the macaroni to cool, stirring occasionally, for 15 minutes.
  2. While the macaroni is cooling, prepare the dressing.  Dump the mayo, milk, brown sugar, salt and pepper into a medium mixing bowl.  Whisk well.
  3. Once the macaroni has cooled for 15 minutes, pour the dressing over the macaroni.  Stir until all of macaroni is coated in dressing.  Add the chopped green onions to the bowl and stir well again.
  4. Cover the bowl and place in the refrigerator to chill for at least 3 hours before serving.
  5. Stir the salad well one more time right before serving.  Enjoy!
