Ingredients:
- 1/2 lb. ground beef
- 1/4 onion, diced
- 2 oz. canned mushrooms
- 1 cup Marinara sauce (no sugar added, low carb - i.e. Yo' Mama's brand)
- 4 oz. 4% fat cottage cheese
- 2 oz. Monterey Jack cheese, shredded
- 227g sliced zucchini (or diced)
- Seasonings to taste: salt, pepper, Italian seasoning, garlic powder
Directions:
- Cook beef until cooked through and crumbly. Drain and set aside.
- Sauté onion until translucent then add mushrooms. Add in seasonings, marinara sauce and cottage cheese. Then add the beef back in. Stir to combine.
- Sauté zucchini in a separated pan to desired doneness.
- In a greased baking dish, layer the sliced zucchini and beef mixture then top with shredded cheese.
- Broil until the cheese is melted, about 5 minutes, and serve.
