Keto Lemon Tart

Yield: 9 squares

Ingredients:
  • 1 1/2 cups almond flour
  • 1/4 cup organic erythritol
  • 1/4 tsp. salt
  • 5 Tbsp. butter
  • 1 tsp. vanilla
  • 3 large eggs
  • 1/4 cup heavy whipping cream
  • 1/4 cup lemon juice
  • 1 tsp. lemon zest
  • 1/2 cup powdered sugar (can switch it out with powdered erythritol for lower carbs and calories)

Directions:
  1. Preheat oven to 350F. 
  2. Mix together the almond flour, organic erythritol, salt, melted butter, and vanilla. When the mixture is crumbly and pressable, put in a greased 9x9" baking dish and press to create a crust. 
  3. Bake for 10-12 minutes or until the crust is lightly golden. Cool completely.
  4. Meanwhile, whisk eggs and sweetener until smooth. Add cream, lemon juice, and zest. Pour over the cooled crust.
  5. Lower the temperature of the oven to 325F. Bake for 20-25 minutes or until the filling is just set (slightly jiggly in the center).
  6. Cool completely, then refrigerate at least 1-2 hours. Dust with powdered sugar or erythritol.
