Ingredients:
- 1 1/2 cups almond flour
- 1/4 cup organic erythritol
- 1/4 tsp. salt
- 5 Tbsp. butter
- 1 tsp. vanilla
- 3 large eggs
- 1/4 cup heavy whipping cream
- 1/4 cup lemon juice
- 1 tsp. lemon zest
- 1/2 cup powdered sugar (can switch it out with powdered erythritol for lower carbs and calories)
Directions:
- Preheat oven to 350F.
- Mix together the almond flour, organic erythritol, salt, melted butter, and vanilla. When the mixture is crumbly and pressable, put in a greased 9x9" baking dish and press to create a crust.
- Bake for 10-12 minutes or until the crust is lightly golden. Cool completely.
- Meanwhile, whisk eggs and sweetener until smooth. Add cream, lemon juice, and zest. Pour over the cooled crust.
- Lower the temperature of the oven to 325F. Bake for 20-25 minutes or until the filling is just set (slightly jiggly in the center).
- Cool completely, then refrigerate at least 1-2 hours. Dust with powdered sugar or erythritol.
