Slow Cooker Nacho Chicken


Preparation time: 5 minutes
Total time: 4 hours and 5 minutes
Yield: 8 Servings

Ingredients:
  • 4 skinless, boneless chicken breasts
  • ½ cup brown sugar
  • ½ cup water
  • 2 cups salsa of choice
  • 1-8 oz. pkg. cream cheese
  • 1 can whole corn, drained
  • 1 can black beans, rinsed and drained
  • 2 cups shredded cheddar cheese
  • For Serving: brown rice, sour cream, cilantro, and avocado
Directions:
  1. Place chicken in crock pot with brown sugar and water. Cook on high for 4-6 hours. Use hand mixer to shred chicken.
  2. Add to the liquid the salsa, cream cheese, corn, black beans, and cheese. Mix well.
  3. Serve over rice or chips. Top with avocado, sour cream, and cilantro
