Preparation time: 15 minutes
Total time: 40 minutes
Yield: 20 muffins
Ingredients:
- 2 cups flour, sifted
- ½ cup shortening
- 1 Tbsp baking powder
- 2 eggs, beaten
- ½ tsp salt
- 1 cup applesauce
- 1 cup sugar
- 1 cup nuts, chopped (optional)
Directions:
- Sift flour, baking powder and salt. Set aside.
- Cream sugar and shortening. Stir in beaten eggs and applesauce. Barely blend in sifted ingredients. Fold in nuts.
- Spoon into greased muffin tins. Bake at 375F for 20 minutes.
- Serve hot.
