Applesauce Muffins


Preparation time: 15 minutes                     
Total time: 40 minutes                     
Yield: 20 muffins

Ingredients:

  • 2 cups flour, sifted
  • ½ cup shortening
  • 1 Tbsp baking powder                                         
  • 2 eggs, beaten
  • ½ tsp salt           
  • 1 cup applesauce
  • 1 cup sugar
  • 1 cup nuts, chopped (optional)

Directions:

  1. Sift flour, baking powder and salt. Set aside.
  2. Cream sugar and shortening. Stir in beaten eggs and applesauce. Barely blend in sifted ingredients. Fold in nuts.
  3. Spoon into greased muffin tins. Bake at 375F for 20 minutes.
  4. Serve hot.
