Refrigerator Bran Muffins


Preparation time: 15 minutes
Total time: 1 hour and 30 minutes
Yield: 5 dozen muffins

Ingredients:

  • 2 cups boiling water
  • 4 cups bran cereal
  • 1 cup butter
  • 2 cups sugar
  • 4 eggs, beaten
  • 5 cups flour
  • 1 tsp salt
  • 5 tsp baking soda
  • 1 quart buttermilk
Directions:

  1. Preheat oven to 400 degrees.  
  2. Combine cereal, sugar, flour, salt, and soda. Cut in the butter.
  3. Stir together water, eggs, and buttermilk. Add to the flour mixture and stir until just combined.
  4. Can refrigerate batter for up to 2 weeks before baking.
  5. Grease muffin tin or line with paper cups. Scoop batter into muffin tin until each space is a 3/4 full.
  6. Bake for 18 minutes or until edges begin to brown. Cool for at least 20 minutes before serving.
  7. Serve warm with butter and jam.
