Autumn Cheesecake

Total time: 2 hours
Yield: 12 Servings

Ingredients:

  • 1 cup graham cracker crumbs
  • 2 eggs
  • 3 Tbsp sugar
  • ½ tsp vanilla
  • ½ tsp cinnamon
  • 4 cup thin peeled apple slices
  • ¼ cup butter, melted
  • 1/3 cup sugar
  • 2 8-oz pkgs cream cheese, softened
  • ½ tsp cinnamon
  • ½ cup sugar
  • ¼ cup chopped pecans

Directions:

  1. Combine crumbs, sugar, cinnamon and butter; press onto bottom of a 9-inch spring form pan. Bake at 350°F for 10 minutes.
  2. Combine cream cheese and sugar. Mixing until well after each addition. Blend in vanilla. Pour over crust.
  3. Toss apples with combined sugar and cinnamon. Spoon apple mixture over cream cheese layer; sprinkle with pecans.
  4. Bake at 350°F for 1 hour and 10 minutes. Loosen cake from rim of pan; coo before removing rim of pan.
  5. Chill until ready to serve.
